Banana Walnut Bread Baked Oatmeal

Banana bread brings back a lot of memories for me. Going to the farmer's market, getting a loaf or two, then enjoying generous slices at home. That was the life. Unfortunately banana bread ain't that great for you, with all the added refined sugars, oil,  n' such. However, there is a way you can enjoy delicious banana bready-ness, with out all the added nasties... In the form of a warm, cake-y bowl of baked oatmeal, fresh out of the oven. No added sugars, and the perfect size for one. And let's not forget the walnuts interspersed throughout, lending a crunch to every bite. It's perfect for those days when you want to reminisce about the good old days, or, of course, when you just feel like banana bread.

Banana Walnut Bread Baked Oatmeal
-1/2 c oats
-1/2 c milk of choice
-1 ripe banana
-2 tbsp chopped walnuts
-1/2 tsp cinnamon
-1/4 tsp vanilla extract
-2 tbsp egg whites
-1/4 tsp baking powder
-1/2 tbsp maple syrup

Directions:
Preheat the oven to 375 degrees F. In a small bowl, combine your oats, walnuts, cinnamon, and baking powder. Stir a few times until everything is evenly combined. Mash your banana (feel free to save a couple slices for topping) in a separate bowl, then add the egg whites, vanilla, maple syrup, and milk. Add the wet ingredients to the dry, and mix well. Transfer the batter to a ramekin, and top with any banana slices you saved. Bake in the oven for 25-28 minutes.
