Raw Walnut Brownie Bites

I got 4 words for ya. Raw. Walnut. Brownie. Bites. Also known as little bundles of happiness. I was originally going to call them Cacao Walnut Bliss Balls, but the moment I tasted them, I knew. These were not Bliss Balls (although I did stand for a moment in pure bliss), they were brownies. Raw brownies, but brownies none the less. Fudge-y, chocolaty, slightly nutty heaven. Unless, of course, you don't like chocolate. But these things are so good, you might just want to convert, at least for a moment. Sorry, I'm trying not to sound too inflated right now, but I can't help myself. :0P

Raw Walnut Brownie Bites.


Raw Walnut Brownie Bites
-1 1/2 c old fashioned oats
-1/2 c + 2 tbsp walnuts+some for topping
-1/4 c honey
-1/4 c water
-3 tbsp cacao/cocoa powder
-1/2 tsp ground cinnamon
-1/2 tsp vanilla extract
-1 tbsp cacao nibs (or chocolate chips)

Directions:
In a food processor, combine all your oats and 1/2 c walnuts. Process until everything has turned into a course meal. Add in your honey, water, and cocoa/cacao powder, and the remaining 2 tbsp of walnuts, then process again until a ball has formed. Test the dough with your fingers. It should be sticky and easily rolled into a ball. If it is too dry, add some more water or honey, and if it is too wet add some more oats. Once the right consistency has been reached add your cacao nibs to the bowl and pulse quickly a couple of times, just until they have been incorporated. Then, using about a tablespoon at a time, roll the dough into balls and put them on a plate. Once all the dough has been used, press a walnut onto the top of each. Now you can either eat them right away or store in the refrigerator.
