Carrot Banana Oatmeal
-1/2 c oats
-1 c milk of choice
-1/2 c very finely grated carrot (about 1 1/2 smallish medium carrots)
-1/2 tsp cinnamon
-1/4 tsp vanilla extract
-1 banana
-1/2 tbsp chia seeds
Directions:
Bring your milk to a boil in a small saucepan. While you wait, grate your carrot(s). Make sure to use the finest setting on your grater. Once the milk is boiling, add the oats, chia seeds, and grated carrot immediately. Let the oats and chia seeds soak up some of the liquid for a couple of minutes, then add the cinnamon and vanilla. Mash your banana (save a couple slices for topping if you want), and when the oats have reached your desired consistency, stir the mashed banana in. Transfer the oatmeal to a bowl, add you toppings of choice (I highly recommend peanut butter, or some other nut butter)and enjoy.
